Perfectly Grilled Fireworks Classic Ribeye Steaks

How many times have you gone to the meat section at Whole Foods to pick out steaks and you're at a complete and total loss at how to choose the best ones? That was me a few years ago. Through trial and error I have learned that choosing the cut of steak is the single biggest factor in how great (or not so great) your meal will turn out. So let me share with you some tips in choosing the best meat:

1. Always tell the butcher what you are looking for, i.e. how much you want to spend, how many people you are serving, your ideal preparation, cook time etc. This will help them guide you to the right decision.

2. Be prepared to spend some $$$ for a high quality piece of meat. You should honor thy food chain. By this I mean, respect the cow, respect the farmer who bred and raised the cow. Respect the butcher who helped you buy the meat. I don't eat a lot of red meat, but when I do, I go all out. Its a special meal so treat it with respect.

3. Look for fine marbling throughout the piece of meat. This is the (white) fat in between the (red) muscle. Even marbling throughout is best. 

4. Find a thickness that you are comfortable with. There are some steaks that are cut super thick and some that are not. Pay attention. If you are feeding the bosses family, maybe go thicker, but for most home made meals about 1 inch is fine.

Perfectly Grilled Fireworks Classic Ribeye Steaks (serves 4)

INGREDIENTS

4 well marbled Ribeye Steaks, 6-8 oz each

Sea salt

Fresh ground pepper

1 jar Fireworks Classic Steakhouse Butter

 

PREPARATION

Heat grill to 500˚. Season steaks well with salt and pepper on both sides. Heat a skillet on the stove to medium high heat. Season skillet by melting 1 tbs of Fireworks Classic Steakhouse butter. Add the steaks and sear each steak for 1-2 minutes per side, depending on thickness.  Transfer to the grill to finish cooking. Grill for 4-6 minutes per side depending on desired doneness and whether they’re bone in or not. For bone in, plan another minute or two. Remove from grill, place on cutting board with a well around the perimeter for juices to flow. Cover with foil and let rest 5-10 minutes. While resting, put 1/2- 1 tbs Fireworks Steakhouse butter on each steak. Serve with Fireworks Classic Steakhouse at the table.
