Fireworks Ginger Miso Cedar Wrapper Salmon
(serves 4-6 main portions)
1 ½ - 2 1/4 lbs of fresh salmon (skin on)- this recipe is really easy to make with individual 6 oz portions of fish- have the fish monger portion them for you if you can’t buy them already done. Raw fish is not always easy to work with…
3 green onions, ends trimmed and sliced length wise
4-6- 1/2 TBS portions of Fireworks Ginger Miso Finishing Butter
4-6 cedar wraps
Heat grill to 500. While grill is heating, make the salmon wraps. First soak the cedar wraps in water for two minutes. Next on a solid surface lay out all the wraps and place a salmon portion skin down on each one. Then layer some green onion sprigs on each piece. Spoon 1/2 Tbs of Fireworks Ginger Miso Finishing butter on each and then wrap up each piece of fish and tie with twine. Place all pieces on the grill and cook, grill covered for about 8 minutes. To check doneness open one wrap and look for white fat coming up to top of fish. When the white fat appears the fish is cooked.
